This garlic mashed cauliflower is next level - it tastes SO similar to mashed potatoes and is so incredibly satisfying!! Absolutely love it 🤤 it will be going on the healthy weeknight rotation at my house for sure 💕

Instructions
- Cut cauliflower into florets and place into a steamer basket with the garlic; bring water to a boil and then steam with lid on for 10-15 mins until cauliflower is soft and mushy (you can also microwave the cauli and garlic in a bowl with 1/2 cup water, covered with plastic wrap for 10-15 mins).
- Place the cauliflower and garlic in a food processor or blender with the sour cream, butter, salt and pepper; blend until smooth and then taste and add salt and pepper if needed.
- Serve with chopped chives on top and enjoy!
Notes:
🌱Vegan Modification: Sub in vegan butter or neutral oil for butter and nutritional yeast for sour cream
