Healthy Lemon Bars

My cousin and I made these healthy lemon bars last night and our fiancés were going crazy for them! Gotta love a lemon dessert in the springtime. We made the crust out of almond flour and used coconut oil instead of butter, so they are completely grain free, gluten free, dairy free and paleo.

Instructions
- Preheat oven to 325°F and line an 8"x8" baking dish with parchment paper.
- Mix together all crust ingredients and press into the base of the baking dish; use a spatula to smooth into one even layer; bake for 10 minutes.
- Mix together all filling ingredients (mix well and make sure there are no streaks of egg left!) and pour on top of the crust; bake for ~20 minutes until the filling is set and no longer jiggles.
- Let cool down at room temp for 30 minutes (so the filling doesn’t crack) and then refrigerate for 3 hours and then run a knife along the edges to release them from the pan; cut into squares and enjoy! Option to sprinkle with powdered sugar on top.
