Crispy Roasted Potatoes

The best crispy roasted potatoes! I par cooked the potatoes in boiling water mixed with baking soda which breaks down their surfaces and helps them crisp up in the oven. Then I tossed them with olive oil, garlic powder, salt and pepper and baked until crispy, so good! Feel free to add in the herbs of your choice.

  1. Preheat the oven to 450°F and boil a pot of water.
  2. Once the water is boiling, add the baking soda (this will help break down the surface of the potatoes + maximize crispiness) and the potatoes; cook for 10 minutes and then drain.
  3. Place the par cooked potatoes into a bowl and toss with olive oil, garlic powder, salt and pepper.
  4. Place onto a baking sheet and bake for 20 minutes, flip the potatoes over and cook for an additional 30-40 min or until golden brown and crispy - enjoy! I served mine with a lemon parmesan aioli which was delicious!
