Crispy Roasted Potatoes

The best crispy roasted potatoes! I par cooked the potatoes in boiling water mixed with baking soda which breaks down their surfaces and helps them crisp up in the oven. Then I tossed them with olive oil, garlic powder, salt and pepper and baked until crispy, so good! Feel free to add in the herbs of your choice.

- Preheat the oven to 450°F and boil a pot of water.
- Once the water is boiling, add the baking soda (this will help break down the surface of the potatoes + maximize crispiness) and the potatoes; cook for 10 minutes and then drain.
- Place the par cooked potatoes into a bowl and toss with olive oil, garlic powder, salt and pepper.
- Place onto a baking sheet and bake for 20 minutes, flip the potatoes over and cook for an additional 30-40 min or until golden brown and crispy - enjoy! I served mine with a lemon parmesan aioli which was delicious!
