My friend's mom from Zacatecas, Mexico taught me how to make authentic salsa verde this past weekend! Fresh, homemade salsa beats store-bought any day and is so easy to make! Thank you Carmen.

Instructions

  1. Boil tomatillos and jalapeños in 1 cup of water (the tomatillos and jalapeños will not be submerged) with the lid on for 15 minutes.
  2. Place the tomatillos, jalapeños and boiling water in a blender with the garlic and salt.
  3. Place a towel over the blender to hold the top down so that hot liquid doesn't splatter) and blend for 2 minutes until pureed.
  4. Pour into a bowl and top with scallions and cilantro - enjoy over tacos or with chips!
