Whenever my grandparents would come into town, they'd make a big batch of this oxtail soup. My brothers and I would line up with our bowls, giddy with excitement over the meal that we were about to enjoy. Fall-off-the-bone tender oxtails in an umami rich broth flavored with garlic, ginger, tomatoes and soy sauce. This dish is near and dear to my heart ❤️ I hope you love it as much as we do!

- Season the oxtail meat with salt and pepper.
- In a large stockpot over high heat, add the vegetable oil, garlic, ginger and scallions; stir and then add the oxtails and a pinch of sugar; brown the oxtails on all sides.
- Mix in the wine and deglaze the bottom of the pot; add water and bring to a boil and then reduce heat to low; skim off any foam.
- Cover the pot and continue heating on low for 1 hour - 1 hour 30 mins until the oxtails are tender and a chopstick pokes through the meat easily.
- Add the onions, bring to a boil and then reduce the heat to low; simmer for 15 minutes.
- Add the daikon and carrots, bring to a boil and then reduce heat to low and simmer for 15 minutes; add the tomatoes, bring to a boil and then reduce heat to low.
- Add the leeks and simmer for 15 more minutes.
- Add sugar and soy sauce; taste and add additional salt and pepper if needed - enjoy!
