Did you know you can cook artichokes in the instant pot? It's so easy! I serve them with a creamy lemon parmesan aioli 🤤🍋such a delicious and unique veggie side dish✨

Instructions
- Wash and trim artichokes by first cutting off the tip and then the tips of all the side leaves; cut off the bottom stem flush with the bottom of the artichoke.
- Spread apart the leaves and sprinkle 1 Tbsp of grated Parmesan cheese in each artichoke; tap the artichokes against the counter so cheese falls down into the leaves.
- Pour the water, lemon wedges and crushed garlic into the Instant Pot; add the artichokes face down on top of the steaming rack.
- Cook on manual setting for 13 minutes for large artichokes eight minutes for small; do an instant release of the pressure when the cook time is finished.
- Mix together the ingredients for the lemon Parmesan aioli and serve on the side - enjoy!
