Veggie Lentil Chili

  1. In a large pot over medium high heat, combine the oil, onion, garlic, carrots and celery - sauté for 5 minutes.
  2. Stir in the lentils, diced tomatoes, tomato paste, 5 cups chicken broth, chili powder, cumin, paprika and salt and pepper to taste.
  3. Bring to a boil, reduce heat to low and simmer covered for 30 minutes, or until lentils are tender - add the remaining 1/2 cup of chicken broth at the end to loosen up the chili before serving.
  4. Serve with chopped red onion, minced cilantro, cheddar cheese and sour cream.

Notes:
