Delicious and crispy homemade home fries! I love this recipe because the potatoes are par-cooked in the microwave and then pan fried on a skillet, so they turn out soft on the inside and crispy on the outside.

  1. Place potatoes in a large microwave safe bowl and top with 1 Tbsp butter divided into chunks; cover with plastic wrap and microwave for 7 minutes shaking the bowl half way through.
  2. Sauté the onion in 1 Tbsp butter over medium heat with salt and pepper until soft and golden brown; remove from the pan.
  3. Melt the remaining 2 Tbsp butter in the pan over medium heat; add the potatoes in one layer (press them down with your spatula to slightly smash them) and let cook undisturbed for 5-7 minutes or until golden brown; flip the potatoes over and brown the other sides for 5-7 minutes.
  4. Turn the heat down to medium low and continue cooking, stirring every few minutes, for ~10 minutes until crispy.
  5. Add the onions back in and season with salt, garlic powder and pepper - taste and adjust seasoning if needed; enjoy!
