Vanilla Custard

Vanilla custard parfaits layered with banana and graham cracker crumbs, so delish! We lightened them up by using nonfat milk and much less sugar than traditional custard. This is a great dessert to make for a dinner party because you can prepare them ahead of time and store in the fridge until it’s time for dessert.

- Beat eggs in a medium bowl and set aside.
- In a medium saucepan over medium heat, whisk together the sugar, nonfat milk, vanilla and salt; continue whisking until the milk begins to scald (bubbles form around the edges of the saucepan) and then remove from the heat.
- Slowly whisk the hot milk mixture into the eggs about 2 Tbs at a time, whisking constantly until all of the milk is combined with the eggs.
- Return the mixture to the saucepan over medium heat; whisk the custard until it thickens (2-3 minutes); do not allow to boil.
- Layer the custard into small serving glasses with banana slices and graham cracker crumbs; finish with a banana slice and some graham crumbs on top.
- Refrigerate for 1-2 hours until cold and enjoy!
