Simple Sesame Soba

This simple sesame soba is so insanely satisfying and delicious - my mom and I have been making it on repeat! Soba noodles are made of 100% buckwheat so they’re naturally gluten free and higher fiber than spaghetti. I love how chewy they turn out when cooked this way!

Instructions
- Bring a heavily salted pot of water to a boil and add soba; boil for 3 minutes and then drain and rinse under cold water.
- Mix together all other ingredients in a large bowl and toss in the soba; serve with sesame seeds on top and enjoy!
