Stuffed Peppers

Ground turkey, sausage and cream cheese stuffed cubanelle peppers made with tons of delicious spices and served with a cilantro lime crema. I first created this recipe last week and it’s definitely going on the regular rotation at my house! So so good

Cilantro Lime Crema
Instructions
- Preheat the oven to 350°F and line a baking sheet with foil.
- Cut an oval shaped opening in the top of each pepper and carefully remove the seeded core, place the peppers on the baking sheet so they are ready for stuffing.
- Sauté the onion in olive oil until translucent (3 min); add the turkey and turkey sausage and sauté until cooked through; add the spices and salt.
- Turn off the heat and mix in the cream cheese until melted and distributed evenly.
- Stuff the mixture into the peppers with a small spoon and bake for 30 minutes or until peppers are soft; top with some shredded Mexican cheese and bake for another 10-15 minutes until cheese is melted and peppers are tender.
- Mix together the ingredients for the cilantro lime crema and serve on the side - enjoy!
Notes:
Vegetarian Modification: Sub in 1 can of black beans (drained), 1 can of corn (drained) and 8 oz. sliced mushrooms for ground turkey & turkey sausage
