Ground turkey, sausage and cream cheese stuffed cubanelle peppers made with tons of delicious spices and served with a cilantro lime crema. I first created this recipe last week and it’s definitely going on the regular rotation at my house! So so good

Ingredients

Cilantro Lime Crema

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with foil.
  2. Cut an oval shaped opening in the top of each pepper and carefully remove the seeded core, place the peppers on the baking sheet so they are ready for stuffing.
  3. Sauté the onion in olive oil until translucent (3 min); add the turkey and turkey sausage and sauté until cooked through; add the spices and salt.
  4. Turn off the heat and mix in the cream cheese until melted and distributed evenly.
  5. Stuff the mixture into the peppers with a small spoon and bake for 30 minutes or until peppers are soft; top with some shredded Mexican cheese and bake for another 10-15 minutes until cheese is melted and peppers are tender.
  6. Mix together the ingredients for the cilantro lime crema and serve on the side - enjoy!

Notes:

Vegetarian Modification: Sub in 1 can of black beans (drained), 1 can of corn (drained) and 8 oz. sliced mushrooms for ground turkey & turkey sausage
