Potato Latkes

Happy third day of Hanukkah! It’s not too late to celebrate with some homemade potatoes latkes! My mom was raised Christian and my dad was raised Jewish, so I grew up celebrating both Christmas and Hanukkah. This is our family latke recipe - hope you love it!

  1. Shred the potato using a food processor or box grater.
  2. Mince the onion in a food processor and then add the shredded potato and pulse until grated.
  3. Add the potatoes and onions to a bowl and stir in the flour, baking powder, eggs and salt.
  4. Drizzle a generous amount of olive oil in a large nonstick pan over medium high heat; add dollops of the potato mixture and flatten into a pancake shape/
  5. Cook for 2-3 minutes per side or until golden brown.
  6. Serve with applesauce and sour cream.
