Low Carb Cookie Dough Bars

Looking for an activity that doesn’t require leaving the house? Make a batch of my low carb cookie dough bars! One of my all time favorite desserts. They taste exactly like cookie dough and are gluten free, grain free and refined sugar free!
Ingredients
Instructions
- Line a loaf pan (or any rectangular dish) with parchment paper.
- Mix together all ingredients and press into the loaf pan, smooth out into one layer.
- Melt an additional 1/3 cup of chocolate chips in the microwave in 30 second increments (stir in between, mine only took 1 minute to total) and spread over the top.
- Refrigerate for at least 30 minutes or until the chocolate has hardened.
- Take out of the fridge and cut into bars - enjoy! Store in the fridge or freezer.
