My mom’s Caesar salad recipe! I grew up eating this and always used to request (demand!?) my mom make it. Pairs well alongside hearty mains like steak or lasagna because it’s so light and refreshing.

  1. Bring a small pot of water to a boil and then place eggs in water and boil (in shell) for 3 minutes; place eggs into an ice bath until ready to use (you’ve made the coddled eggs!).
  2. Place lettuce in a large salad bowl, and in a separate bowl, combine lemon juice, olive oil, salt and pepper.
  3. Crack open the eggs and scoop them into the salad bowl; toss the lettuce in the coddled eggs and then pour on the lemon dressing; toss and add salt and pepper if needed.
  4. Sprinkle with parmesan cheese and then add in the croutons - enjoy!
