Korean Chive Pancakes

Grandpa’s back! These are his Korean savory pancakes made with jalapeño and chives, super chewy and packed with greens. You can find the Korean pancake mix at any Korean store or online (they have it on Amazon)! We cut the pancakes into small squares and served with a ponzu sauce.

Instructions
- Mix together the Korean pancake mix, water, sugar and salt; add in the chives and jalapeño and mix until evenly distributed.
- Heat a large nonstick pan and coat it with olive oil.
- Place a large dollop of the chive batter on the the pan and flatten into a circle; cook for 2-3 minutes (or until golden brown) and then flip to cook the other side; repeat until all batter is used.
- Transfer onto a cutting board and cut into squares; serve with a dipping sauce made of 2 Tbsp soy sauce, 1 Tbsp white vinegar, 1 Tbsp lemon juice & 1 tsp water.
