Healthy Mapo Tofu

💮This is a healthy and delicious version of my all time favorite Chinese dish - Mapo Tofu! I make it once per week!

Instructions
- Mix together the ingredients for the sauce and set aside.
- In a large pan over medium heat, stir fry the ginger, garlic, onion and jalapeño in olive oil;
- Add the ground turkey and stir fry until cooked through.
- Pour in the sauce and turn up the heat to medium high; it will thicken as it heats.
- Add the peas and carrots, scallions and the diced silken tofu (be gentle when stirring in the tofu because you don't want it to get completely mashed).
- Continue cooking until the tofu is heated through and then stir in the rice vinegar at the end; taste and add more salt, pepper or vinegar if needed - enjoy!
- Serve over cauliflower rice or regular rice, or eat as is in a bowl (that's how I like it and it's super low carb that way!)
Notes:
📛This is definitely a spicy dish! To make it more mild, add less chili sauce / jalapeño. I use the Huy Fong Chili Garlic Sauce (red jar with a green top) which you can find in most grocery stores near the Sriracha.
