Broccoli & Swiss Stuffed Chicken

Love this dish! Definitely a family favorite, my mom used to make this every few weeks when I was growing up πŸ˜‹

Ingredients

  1. Preheat oven to 350Β°F, spray a glass baking dish with nonstick spray and sprinkle both sides of the chicken breasts with salt and pepper.
  2. Mix the breadcrumbs and parmesan together on a plate.
  3. Coat both sides of a chicken breast with the breadcrumb mixture.
  4. Place one piece of Swiss cheese and 2-3 broccoli spears (or sub florets) in the center of the chicken breast, roll the sides in and place seam side down in a glass baking dish.
  5. Cover each piece of chicken with another piece of cheese (if there is extra space in the baking dish, add some extra frozen broccoli with salt and pepper with Swiss cheese on top - it’s a delish lil bonus item!)
  6. Bake at 350Β° for 45 minutes then broil for 2-4 minutes until the Swiss cheese on the top is golden brown (watch while you’re broiling because the cheese will burn easily if left for too long) - enjoy!
