Gluten Free Chickpea Mac & Cheese

A healthier, gluten free version of mac and cheese! My mom and I made up this recipe on the fly and it was SO GOOD - the whole fam was loving it! We used chickpea pasta and made the cheese sauce with coconut milk and pumpkin purée instead of whole milk and flour.

  1. Preheat oven to 350°F.
  2. Heavily salt pasta water (it should taste like the ocean), and bring to a boil; cook chickpea pasta for 6 minutes or until al dente (it will cook more in the oven).
  3. Over medium heat, stir together the coconut milk, white pepper, salt, pumpkin purée, sharp cheddar, water, cayenne and Coleman mustard; taste and adjust seasoning if needed.
  4. Turn off the heat and mix in the chickpea pasta; transfer into a baking dish and cover with some additional cheddar cheese on top.
  5. Bake for 30 minutes or until the cheese on top is melted and bubbling.
