Gluten Free Chickpea Mac & Cheese

A healthier, gluten free version of mac and cheese! My mom and I made up this recipe on the fly and it was SO GOOD - the whole fam was loving it! We used chickpea pasta and made the cheese sauce with coconut milk and pumpkin purée instead of whole milk and flour.

Instructions
- Preheat oven to 350°F.
- Heavily salt pasta water (it should taste like the ocean), and bring to a boil; cook chickpea pasta for 6 minutes or until al dente (it will cook more in the oven).
- Over medium heat, stir together the coconut milk, white pepper, salt, pumpkin purée, sharp cheddar, water, cayenne and Coleman mustard; taste and adjust seasoning if needed.
- Turn off the heat and mix in the chickpea pasta; transfer into a baking dish and cover with some additional cheddar cheese on top.
- Bake for 30 minutes or until the cheese on top is melted and bubbling.
