Crunchy Quinoa

My mom and I have been making this crunchy quinoa nonstop over the last few months! It adds an amazing texture to any salad or soup and is also delicious on its own as a healthy, crunchy snack.

- Preheat oven to 350°F.
- In a small pot, stir together the quinoa, water and salt; bring to a boil and then cover and simmer for 15 minutes or until all water has been absorbed.
- Fluff the quinoa up with a fork and pour it onto a baking sheet lined with parchment paper; spread into one even layer.
- Bake for 10 minutes and then mix the quinoa around the pan with a spatula (because the outside will cook faster) and bake for another 10 minutes; if the quinoa isn’t somewhat crispy, bake for an additional 5-10 minutes; note that the quinoa will get crispier as it cools down! So it doesn’t need to be completely crispy when you take it out of the oven - enjoy!
