Chinese Beef Pepper Steak

  1. Mince ginger and garlic, dice the onion and cut the tomatoes and bell pepper into chunks.
  2. Cut flank steak against the grain in thin strips - marinate with 2 Tbsp soy sauce, salt, pepper, sesame oil, half the ginger and garlic, and 1 Tbsp of cornstarch mixed with 2 Tbsp of water.
  3. In a large pan or wok, sauté half the remaining ginger and garlic in olive oil. When hot, add the green peppers and stir fry with salt and pepper to taste until blistering but not mushy; remove the peppers from the pan and set to the side.
  4. Add the flank steak to the pan with some olive oil - sauté until medium rare and then set aside.
  5. Add the remaining ginger and garlic to the pan with some olive oil; add the onions and tomatoes and sauté for ~3 minutes.
  6. Add the peppers and steak back into the pan, sauté.
  7. Add the black bean sauce, 2 Tbsp soy sauce, and 2 Tbsp of cornstarch mixed with 4 Tbs water - sauté, the sauce will start to thicken.
  8. Add salt and pepper to taste (or extra soy sauce if needed), serve with white rice or cauliflower rice.
