Vegan Asian Quinoa

This vegan Asian quinoa is spicy, tangy and full of sesame flavor! Perfect for a quick and easy healthy lunch.

Instructions
- In a small pot, stir together the quinoa, water, frozen kale and some salt - bring to a boil and then cover and simmer on low for 15 minutes.
- When the quinoa is done, fluff it up with a fork and season with sesame oil, sesame seeds, sriracha, white vinegar, and salt & pepper to taste - taste it and add more seasoning if you want more spice or flavor.
- Transfer into a bowl and serve with avocado and some sesame seeds sprinkled on top - enjoy!
