Tomato Caper Snapper

I’ve gotten to do a bunch of cooking with my Auntie Susan over the past couple of weeks because we are sheltering in place together. This tomato caper snapper is one of her favorite dishes! Has anyone been to Mama’s Fish House in Maui? That’s where this recipe is from! So delicious.

Instructions
- Sprinkle each filet with salt and pepper and coat in a layer of flour.
- Heat up the olive oil and 1 Tbsp of butter in a large skillet; cook each snapper filet for 2-3 minutes on each side or until golden and then remove from the pan (keep warm under a piece of foil).
- Add the onion, garlic, cherry tomatoes capers and white wine to the pan; sauté until the wine has reduced by half (2-3 minutes); stir in the other Tbsp of butter.
- Spoon the sauce over the fish and sprinkle with some fresh parsley on top - enjoy!
