S'Mores Cookies

A warm doughy graham cracker cookie with a toasted marshmallow and chocolate kiss, all the elements of a classic s’more transformed into a delicious, elegant cookie!

- Preheat oven to 350°F and line two baking sheets with parchment paper.
- Grind the graham crackers into crumbs in a food processor or crush them in a ziplock bag - make sure the crumbs are crushed finely!
- Mix together 1/2 cup of the graham crumbs (set the other 1/2 cup aside), butter, coconut sugar, egg and vanilla; add in the flour, baking powder, baking soda and salt; mix until a dough form.
- Form into 1 inch cookie dough balls and roll each ball in graham cracker crumbs; bake for 10-12 minutes and then let cool for 5 minutes.
- Place a marshmallow half on each cookie and broil for 30-45 seconds until golden brown; finish by placing a Hershey kiss on top - best enjoyed immediately while the marshmallow is hot!
