Veggies and pasta - does it get any better than that?! My Sesame Soba Noodle Salad is one of those recipes that you'll want to make again and again; it's definitely on the regular dinner rotation over at my house!

  1. Grate a carrot on the largest setting to create shreds and mince cilantro.
  2. Slice scallion, cucumber and red bell pepper in thin strips.
  3. Grate ginger on the smallest settings and place into a separate bowl for the sauce - add rice vinegar, sesame oil, honey, chili sauce, soy sauce, sesame seeds, salt and pepper.
  4. Add soba noodles to boiling water and cook for 4 minutes, drain and rinse with cold water.
  5. Combine cooked soba with veggies and sauce, stir to mix evenly.
  6. Top with sprinkled black sesame seeds and fried onion (you can find this at most Asian grocery stores) - garnish with a slice of red chili.
