Sesame Soba Noodle Salad

Veggies and pasta - does it get any better than that?! My Sesame Soba Noodle Salad is one of those recipes that you'll want to make again and again; it's definitely on the regular dinner rotation over at my house!

- Grate a carrot on the largest setting to create shreds and mince cilantro.
- Slice scallion, cucumber and red bell pepper in thin strips.
- Grate ginger on the smallest settings and place into a separate bowl for the sauce - add rice vinegar, sesame oil, honey, chili sauce, soy sauce, sesame seeds, salt and pepper.
- Add soba noodles to boiling water and cook for 4 minutes, drain and rinse with cold water.
- Combine cooked soba with veggies and sauce, stir to mix evenly.
- Top with sprinkled black sesame seeds and fried onion (you can find this at most Asian grocery stores) - garnish with a slice of red chili.
