Easy Seared Scallops

The easiest, most impressive 10 minute dinner! Your friends and fam are sure to love these seared scallops.
Ingredients
Instructions
- Rinse and dry scallops thoroughly; sprinkle with salt and pepper on both sides.
- Toss arugula with some lemon, olive oil and salt.
- Heat up butter and 2 tsp olive oil in a skillet on medium high heat.
- Once the butter begins to smoke, place scallops on the pan and sear for 2-3 minutes on each side (make sure not to overcrowd the pan); serve over the arugula.
- Remove scallops from the pan and add the capers and chicken broth; deglaze the pan (scrape off the flavor that has stuck to the pan) and drizzle the caper sauce onto the scallops; finish the dish with a squeeze of lemon.
