One Pan Chicken & Broccoli

One pan chicken with broccoli. The perfect easy dinner! I brined the chicken in salt water first because it seals the moisture in when cooked, but you can definitely skip that step if you’re short on time!

Instructions
- Preheat oven roll 400°F.
- (Optional) Mix together the water and kosher salt to create a brine; soak the chicken breasts in the brine for 15-30 minutes (this will make them super juicy when cooked!); when done brining, rinse chicken off in cold water and pat dry with paper towels.
- Place the chicken breasts on a baking sheet and sprinkle generously with garlic powder, paprika, rosemary, salt & pepper on both sides.
- Add the broccoli florets to the pan and toss with olive oil and minced garlic; season with salt and pepper.
- Bake for 35-40 minutes or until chicken reaches 165°F.
