Low Carb Turkey Chili

Start the week off on a healthy note with this low carb turkey chili made with bell pepper, onion and celery instead of bean. It’s hearty yet light and is packed with tons of delicious spices. One of my go-to recipes when I feel like being super healthy!

- In a large pot or dutch oven over medium high heat, sauté the bell pepper, onion, celery, jalapeño, garlic and spices (salt, pepper, chili powder, cumin, cayenne & paprika) in butter until vegetables are tender and onions are translucent (~5 min).
- Push the veggies to the sides of the pot and then add the ground turkey to the middle; season with a little more salt and pepper and break up the turkey into small pieces with your spatula; continue to stir fry until turkey is cooked through (~5 min).
- Pour in the diced tomatoes, chicken broth and bay leaf; cover and simmer for 15 minutes.
- Taste and add more salt and pepper if needed; remove the bay leaf.
- Serve with some sliced scallions and cheddar cheese sprinkled on top - enjoy!
Notes:
Vegan Modification: Sub in beyond ground meat (or beans) for turkey and vegetable broth for chicken broth.
