Green Goddess Soup

Green goddess soup made with onion, broccoli, cauliflower and asparagus. So incredibly healthy and delicious! It has a creamy taste and texture and a warm spice from the cumin 🤤✨

Instructions
- In a large pot, sauté the onion and garlic over medium high heat until onions are translucent (3-4 min).
- Add the rest of the ingredients except for the spinach and avocado; bring to a boil and then cover and simmer for 15 minutes or until veggies are tender.
- Turn off the heat and let cool slightly; blend in a blender or using an immersion blender and then return to the pot and add the spinach.
- Turn the heat on medium and cook until spinach is wilted (3 min); option to blend the spinach in roughly or keep it in tact for some more texture.
- Taste and adjust seasoning (salt & pepper) if needed; enjoy with sliced avocado on top.
