Chicken Piccata

Absolutely loved this chicken piccata. I can't wait to make it again! The chicken picks up the bright flavors of capers and lemon and the combination is divine.
Ingredients
Instructions
- Pound the chicken breasts to flatten; season with salt and pepper and dredge in flour.
- In a large skillet over high heat, melt 1 Tbsp of butter with olive oil; place the chicken on the skillet and cook until golden brown and internal temperature is 165F (~3-5 mins per side).
- Remove the chicken from the pan and add the white wine, lemon juice, garlic and capers; cook until reduced by half (~3-4 mins); stir in the final Tbs of butter and spoon the sauce over the chicken; garnish with fresh parsley - enjoy!
