Cauliflower Fried Rice

If someone asked me what my signature dish is, this cauliflower fried rice would be it! My mom is half Korean and half Chinese, so I grew up with a lot of Asian flavors in the house 💮. I was chubby growing up, so I had to learn how to manage my weight at an early age and have always tried to stay lower carb. Love this cauliflower fried rice because it is satisfying and filling without the carbs! 🥡🥢

- Scramble the eggs in 1 Tbsp sesame oil and remove from pan.
- Sauté the scallions in 1 Tbsp sesame oil for ~2 min and then add the frozen riced cauliflower and frozen peas and carrots; season with 2 Tbsp soy sauce, garlic powder, sesame seeds, salt and pepper.
- Add the scrambled egg back in and sauté until frozen veggies are hot (~4 min) - don’t over cook because the riced cauli will become mushy.
- Taste and don’t be afraid to add more soy sauce, garlic powder or salt if needed for more flavor - enjoy!
